Woodbury Cowboy Jack's to Open Monday

The restaurant was completely renovated and has a number of features unique to Woodbury.

The Woodbury Cowboy Jack’s is set to open Monday, May 6.

The space—which has seen several restaurants come and go over the past few years—has been completely renovated.

“We tried to bring the After Midnight Group’s flavor to it and we’re really excited about it,” said Chris Diebold, owner.

About $1 million was sunk into the renovation, which features 38,000 square feet of old barn wood, two fireplaces, shuffleboard courts and Western décor. The bar was also moved to the other side of the restaurant.

“We could have just slapped a coat of paint on it, but that’s not what we do,” Diebold said.

Volleyball courts are being installed (teams have already signed up and the leagues are set to begin in June) and there’s also a roulette-like charity-gambling game, along with other updates. There will also be a bag-toss game available outside.

And Cowboy Jack’s has a mechanical bull.

“It’s a big facelift,” Diebold said. “Hopefully it’s something Woodbury residents and people from the surrounding area will like.”

About 110 people will be employed at Cowboy Jack’s, which is located at the former Woody’s Roadhouse along Woodlane Drive.

There is a large banquet room with space for about 200 people. The outdoor patio will also be available for groups that reserve the space, Diebold said.

Hours are 11 a.m. to 2 a.m. all week. Happy hour is 3-6 p.m. and 1 p.m. to midnight every day.
