Pregnancy Cookie Dough Bites

My husband loves when I make chocolate chip cookies and by loves, I mean he will eat a dozen of them plus some of the batter.

He usually does not eat any sweets, but this is his weakness.

I decided to use my leftover cashews and dates from my previous recipe to make raw vegan cookie dough bites. And since they are raw, my pregnant self can eat them too. Plus, they will curb those pregnancy cravings for something sweet and gooey.

I made one batch with chocolate chips and one with cinnamon and raisins. Everyone needs a small treat once in awhile!

If you do not want to use maple syrup, I would use 2 Medjool Dates, or Stevia.

Ingredients:

2/3 Cup Raw Cashews
1/3 Cup Oats
1 Medjool Date
1 Tablespoon Maple Syrup (You can use stevia if you prefer)
1 Teaspoon Vanilla Extract
1/4 Cup Chocolate Chips (I prefer 70% cocoa chocolate chips. Sometimes I buy a 70, 80 or 90% cocoa chocolate bar and chop it into small pieces)

Directions:

Place the cashews and oats in your food processor and blend until it has the consistency of flour. Add the date, maple syrup, and vanilla and blend. Mix the chocolate chips in by hand and then roll the batter into balls.

For the cinnamon raisin cookie dough, I substituted the chocolate chips with raisins and added 1 teaspoon of cinnamon.
