Woodbury Man Hopes to Open New Liquor Store Soon

The Woodbury City Council on Wednesday approved a liquor license for Aqua Vitae Wines and Spirits.

A Woodbury man plans to open a new liquor store in town during the first quarter of 2013, possibly as early as January.

Owner Dave Wolfe, who has lived in the city for the past 15 years, said he’s still working out some of the details for Aqua Vitae Wines and Spirits, set to open at 779 Bielenberg Drive, suite 102.

“This is my first foray into it,” said Wolfe, who has experience with local beer wholesalers and Redhook Brewery.

Wednesday, the Woodbury City Council approved an off-sale liquor license for the store at Tamarack Hills.

The store will carry special items, along with the standard liquor store selections, Wolfe said. He wants Aqua Vitae Wines and Spirits to be a place people can go to get information about beer, wine and liquor in a “small, community-based” store.

As for the name, it comes from the Latin term for “water of life,” Wolfe said.

He acknowledged it’s tough to pronounce.

“It could be shortened to AV Wine and Spirits before too long,” Wolfe said with a laugh.

In the coming weeks, he said he’s going to “make sure it’s done right.”

“This was step No. 3 out of about 100,” Wolfe said. “Slowly but surely, we’ll get it done.”
